THE STORY OF A TREASURE.
THE CULTURE OF BALSAMIC VINEGAR HAS BEEN PRESENT IN GUBERTINI’S FAMILY SINCE 1880S
THE ORIGINS
CELSO GUBERTINI landowner of the Modena Apennines, in 1880, returning from a long trip to the United States, made the farsighted decision to start the vinegar factory with only three barrels, as a symbol of tradition and well-being, a precious asset to be handed down for family use.
HISTORY
Two of those three barrels were lost over the years, while one, overcoming the adversities of time unscathed, is still in the acetaia (vinegar cellar) with its priceless content.
GROWTH
During 1950s-60s of 1900, in the italian social-economic boom period, other barrels were added to cope with the enlargement of family members.
THE MODERN ERA
Thus, it was the third generation, starting from the 70s, who began to control and keep track of all the periodic processing on each barrel, which allowed to greatly raise the quality standards in the following years, preparing the ground for more conscious management in biocultural matters.
BEYOND THE ACETAIA
In the 80s we went beyond the vinegar factory, researching and selecting the best grapes and the best woods to be able to create the microbiologically perfect environment in which we make the natural acetic transformations take place.
PRESENT DAY
Over the last 20 years, with the entry of the fourth generation, management of protection and conservation of the first barrels have started and at the same time the initiatives to make our product known, until then used exclusively for the family or as a gift for great occasions.
CRAFTSMANSHIP AND AUTHENTICITY
FINDING A LOT OF AMAZEMENT IN THOSE WHO TASTED OUR BALSAMIC, WE DECIDED TO MAKE IT POSSIBLE TO PURCHASE A SMALL PART OF OUR PRODUCTS, TO SHARE THE SAME EMOTIONS THAT WE AND OUR ANCESTORS EXPERIENCED.
