THE STORY OF A TREASURE
THE CULTURE OF BALSAMIC VINEGAR HAS BEEN PRESENT IN THE GUBERTINI FAMILY SINCE THE 1880s
THE ORIGINS
CELSO GUBERTINI, a landowner from the Modena Apennines, made a forward-thinking decision in 1880 upon returning from a long journey to the United States to establish a vinegar house with just three small barrels, as a symbol of tradition and prosperity, a precious legacy to be passed down for family use.
THE HISTORY
Of those three small barrels, two were lost over the years, while one, surviving the adversities of time unscathed, remains in the vinegar house today with its priceless contents.
THE GROWTH
During the 1950s and 60s, amid Italy’s strong economic and social boom, additional barrels were added to accommodate the growing family members.
THE MODERN ERA
Thus, starting in the 1970s, the third generation began monitoring and keeping track of all periodic processing for each individual barrel. This has allowed for significantly elevated quality standards in subsequent years, preparing the ground for more conscious management in biocultural matters.
BEYOND THE VINEGAR HOUSE
In the 1980s, we went beyond the vinegar house, researching and selecting the finest grapes and woods to create the perfect microbiological environment for natural acetic transformations.
TODAY
Over the last 20 years, with the entry of the fourth generation, we have initiated measures to protect and preserve the first barrels while undertaking initiatives to introduce our product, which until then had been used exclusively for family or as a gift for special occasions.
CRAFTSMANSHIP AND AUTHENTICITY
FINDING GREAT AMAZEMENT IN THOSE WHO TASTED OUR BALSAMIC VINEGARS, WE DECIDED TO MAKE A SMALL PORTION OF OUR PRODUCTION AVAILABLE FOR PURCHASE, TO SHARE THE SAME EMOTIONS THAT WE AND OUR ANCESTORS HAVE EXPERIENCED.
EACH BOTTLE IS NUMBERED, BOTTLED, AND FINISHED BY HAND, AN IMPERFECTION THAT ENHANCES ITS CRAFTSMANSHIP AND AUTHENTICITY.
